These are so fabulous. The link will take you to a link for the recipe. This is a keeper for when only something different will do. It’s really easy to piece it together too. Mixers are your best friends when it comes to making cookie dough. Beware that for this recipe you will need one egg PLUS the yolk of another egg. Save that egg white for something else. Everything gets mixed together with the coconut and white chocolate being added last.
Another thing to note is that this dough needs to chill for a while. Preferably, you will make it the night before so it can chill overnight. When you’re ready for baking it’s very easy to get going. Scoop the dough onto your parchment paper-lined baking sheet. These will spread a bit so take care to keep them about 2 inches apart from each other or you will have an ugly, although tasty, blob of cookie.
