3 LAYERS OF COOKIE LOVE!
This recipe has lots of steps. LOTS. But don’t let that put you off. They all go relatively quickly and you can pretty much do them all in conjunction with each other. After all, it’s not every day you’re going to make something like this. An upcoming kid’s party is a great excuse to make this one. Even though it requires you to make 3 different batches of cookie batter, you can save time by making them in 3 separate bowls at the same time. They have a lot of shared ingredients. Just place a paper or recipe card in front of each bowl so you don’t get confused. Then once you get the dough squared away, it’s all about putting it into the pan and baking it. Definitely use parchment paper for easy removal!
Once your cookie cakes cool, you’ll need to layer them carefully with buttercream serving as the only buffer between them. The recipe includes how to make the buttercream yourself, which I highly recommend. If you’re really pressed for time though, you can always use store-bought stuff but I’m warning you now that it will make this less glorious than the recipe intends. That’s food for thought.
