EASY ELEGANCE!
What’s awesome about this recipe is that it takes no time at all to whip up. And it comes out with such panache you’ll feel like a fool for not thinking of creating this sexy dessert sooner. Of great importance when shopping for your ingredients, make sure you get the soft kind of lady fingers. These can be found in the freezer section of your local supermarket near the pie crusts and novelty desserts. If in doubt, ask. You want the kind that are soft right from the package, not the firm ones.
Now, as promised, I’ll tell you what to do should you want to keep this alcohol-free. Simply omitting the Chambord isn’t an option because it’s that raspberry essence that really pulls this all together and makes it shine. So if you don’t want to use the liqueur in here, use 1 teaspoon of raspberry extract for every 2 tablespoons of Chambord the recipe calls for. While this does go together in a flash, you’ll need to allow time for it to set in the fridge for a good 4 hours before you plan to serve it. It goes great with your best gourmet coffee too!
