MAKE BRUNCH GREAT AGAIN!
Why spend too much money going out to brunch when you can totally make your own yourself? Plus, you can enjoy all the mimosas or bloody Mary’s that you want without having to drive. Just sayin’! To me, quiche is the perfect brunch item. It’s got eggs in it but it’s more like a pie, right? And thus, it’s fancier. It makes me feel like I should be eating it off the good plates. Not from leftover Cinderella plates from my daughter’s birthday party while standing in the kitchen. Ahem. Anyway, you see a lot of cheese quiche and spinach quiche. But a tomato quiche? I hadn’t seen that, and I’ve had lots of quiche in my life. I couldn’t wait to try this.
So what’s the verdict? Well let me just tell you…WOW. It’s delicious and easy and is a great way to use up tomatoes that you don’t want to go bad. I thought it was a sign I should make this immediately when I was looking for something to do with my tomatoes. This quiche also bodes well for company. It would also be lovely on a picnic.
