ANYTHING WITH CHEESECAKE IN IT HAS TO BE GOOD!
Honestly, that’s one of the reasons I chose this recipe. Because it’s got cheesecake in it and nothing bad ever happens when you’ve got cheesecake in the mix. Look at the Golden Girls. They always solved all of their problems over cheesecake.
Plus, you know me. I am a sucker for desserts that are fusionized with other desserts. It’s like taking the absolute best from one category and merging it with the absolute best from another. So with this hybrid dessert, what gives it that tiramisu flavor extraordinaire is the coffee of course. To achieve this properly, you need to dissolve half of the instant coffee in some water and then brush it gently on the vanilla wafers. Notice I said gently! Don’t man-handle those things or you’ll be sorry.
The rest of your coffee will go into the cheesecake mixture. I specify this because I may or may not have accidentally dropped all my coffee into the cheesecake mixture when I first set out to make this. That’s just what I get for baking before drinking my morning coffee, but to my credit, my kids woke me up early. And I made it right the second time. So there.
