Get ready, get set, go! Start that timer and be amazed when you’ve got cookies 20 minutes from now. Your mixer will be of great assistance in getting this done quickly. Butter and sugars will go first. Get that nice and fluffy, then add the whole egg, the extra yolk and vanilla. If a lot clings to the side of the bowl, scrape it down. Keeping the order of the ingredients is important for mixing this dough up right. Next is the baking soda, cream of tartar, salt and cinnamon. Mix those for only 30 seconds before adding the flour, which you’ll mix until just combined.
Take the dough and roll it into little balls that you will then roll into the cinnamon sugar mixture. Then it’s baking time! It will take 10-12 minutes for these to be done. Check them at 10 minutes. The edges should be just golden. The top will look undercooked but will completely firm up once cool. That will render softer cookies. For crispier cookies, bake for 2 more minutes from when the edges turned golden. And there you have it…perfect cookies in 20 minutes!
