…MAKE LEMON POUND CAKE!
The first thing you should know about making this is that you CAN make one big loaf instead of 2 mini loaves. The original poster provides exact instructions for this. It’s all a matter of preference as to whether you want (or need) one or 2 loaves. If you make 2 loaves, you can give one to a friend and enjoy the rest. Win-win! You can also freeze these easily, but you’ll need to do so before adding icing. When you’re ready to enjoy them, just thaw at room temperature and then add the icing once they’re completely thawed.
Making it is pretty easy too. You’ll need to remember to add each egg one at a time. When the pound cake is done, you’ll need to leave the loaves to cool for 10 minutes in the pan before removing them to cool on wire racks. That makes me think…is that how they came up with the saying “loafing around”? Hmmm…
