THEY DON’T CALL IT A SURPRISE FOR NO REASON!
What makes most carrot cakes come together is that sweet cream cheese frosting. But this carrot cake takes that one step further with a surprise. The surprise being a filling of sweet cream cheesy goodness. Yum! You’ll be making this in a fluted tube pan. Unless you don’t have one…then use a bundt pan. Whichever you use, don’t forget to grease and dust it. Get the batter ready and pour 3 cups of it into the pan. Then in goes that cream cheese filling. And then…you guessed it! Top it off with the remaining batter.
Another thing to note – cool it in the pan for 10 minutes. Then pop it out onto a wire rack so it can cool completely. While it does that, you’ll make the frosting which is as cinchy as can be. Just slowly add in the confectioners’ sugar until it gets to your desired smoothness. And as this is cream cheese-based, store it in the refrigerator!
