LIKE PULLING A RABBIT OUT OF A HAT, BUT BETTER!
I have always loved cake. Always. Except for carrot cake when I was a kid. I would not even give it half a chance. If I asked what was for dessert and I was told it was carrot cake, I’d run out of the room shrieking as though Freddy Krueger had come bursting out of our oven. Kids often have wacky perceptions of things. For me, it was perceiving something to be horribly wrong with a cake made of carrots. I had no problem with carrots themselves. I loved them in salads and loved to snack on them. I loved them as a side dish to dinner too. But in cake? I thought the adults had gone mad.
It wasn’t until I was a lot older, grown up and on my own that I got into carrot cake. Someone had coerced me into it and I didn’t want to be rude. So I took a bite and from then on, I was hooked. I think it has a lot to do with the cream cheese frosting. Now this recipe though gives carrot cake an extra something special.
