NOW THAT’S MY KIND OF SALAD!
I know what you’re thinking…a salad for dessert?!? Bah! Now wait just a minute. We’re not talking lettuce, cucumbers, tomatoes and onions here. There will be none of that in my desserts, thankyouverymuch. Not that there is anything wrong with a typical salad. I usually serve salad with most dinners. It’s the best way to make sure we’re all getting a plenty of vegetables in. And I do truly adore salads. I like to trick mine out with all kinds of cool veggies so that it’s different every time.
But this salad here is a dessert salad, made of berries and creamy goodness. It’s perfect for summer because of the fresh berries and it’s so simple, both in execution and in taste, that it goes great at the end of a robust meal. Sometimes you just need a lighter dessert and this one isn’t just light and lovely but also absolutely satisfying on so many levels.
