First, you’ll deal with the crust. It’s easy but don’t be alarmed that it’s all crumbly and dry. It’s supposed to be that way, so calm down. But because it is this texture, you need to push it down into the pan to bake. Really press it together so it unifies when it bakes. While it bakes, you’ll get the cheesecake portion mixed up and ready. Once the crust has golden edges, go ahead and slather it with the strawberry preserves. Then you’ll top it with your cheesecake mixture.
After the bars bake, cool them before putting them in the refrigerator. They should remain there for at least 4 hours before serving. Any leftovers should be promptly stored there too. You can garnish these with whipped cream and fresh strawberries if you desire. I just enjoyed them as-is. They were wonderful and have a light and summery air to them. The husband and kids went crazy for these. I brought some over to our neighbors too. You’ll never have any enemies if you make desserts and share them around, especially these bars!
