EASY PEASY CHEESY!
I know I’ve rambled on to you before about cheesecake. I love the stuff. So dense and delicious, yet with a lightness to it. And the possibilities are endless when it comes to cheesecakes too. You’ve got your baked ones and your no-bake ones and ALL of them are amazing. I’ve yet to meet one I didn’t love. This is one that you bake but it’s so terribly easy. Because it’s in a 9×13 to make it into bar-form and you bake the crust first, you don’t need to fuss over a water bath. This is a simplified version of cheesecake that is no less delicious.
The crust is this fabulous shortbread. Then it gets topped off with strawberry preserves. And then it gets topped with a light, lemony cheesecake that is out of this world. Cheesecake bars are probably one of the best inventions ever. It’s like having a hand-held portable cheesecake you can take anywhere. No fork or spoon needed. Just eat and go.
