PINKALICIOUS!
So, whether you’ve got a girls’ party like me or a bridal or baby shower, this is such an easy, sweet cake to make. Cake mix and strawberry gelatin make this a breeze. In the batter, you will add mashed unsweetened strawberries. You can mash fresh ones or frozen, but with the frozen variety, beware of using too much of the juice. It’s best to let them thaw first so you’re not suddenly overwhelmed with more juice during the mashing.
This cake is a great base recipe. I say this because it gives you the freedom to choose your frosting. You could put vanilla frosting on there. Or strawberry. Or creamed cheese. Or chocolate. The possibilities are endless. Plus, you can make your own buttercream (it’s so easy!) or you can buy the jarred stuff. What did I do? I made a cream cheese frosting and used just a little bit of the juices from the frozen strawberries. I added a little food coloring too to help with the pink color. The end result was a really strawberry flavored cake that was prim and pink and proper. I garnished with strawberry slices too. You really should never go without some kind of garnish. It’s like leaving the house without makeup. Eek.
