BOW DOWN BEFORE THE COOKIE GODS!
Confession time: I have boxes and boxes of instant pudding. Mostly chocolate. You’re not surprised, I’m sure. I would get them at the supermarket during BOGO sales along with my coupons. But alas, I never really make pudding. I throw it in cake mixes sometimes but not often enough that my stash ever depletes. And I keep buying more of it. And so, my cabinet was suddenly, or so it seemed, over-run with pudding. While I like instant pudding tossed into recipes, I’m not such a fan of it on its own. Why? Well, it doesn’t taste as good as real pudding does. I know. I’m such a pudding snob but it really is true.
Anyway, I was organizing the pantry and when I realized just how many pudding boxes I had and that I’d better use them before the expiration date, I got busy looking for new ways to use them. And that, my dears, is how I found this delightful recipe that I will hold on to forever and so will you. A chocolaty cookie that’s soft, full of melty chocolate chips and truly opens up the heavens of happiness.
