Well, wait a minute. It would technically be a rectangle. But you get the idea. Why make a regular ol’ round pie when you can make a big ol’ slab of lusciously fruity pie? That’s what I was repeatedly asking myself after I found this recipe. WHY had I not even had this idea before? It’s brilliant! A pie baked in one big, jolly slab means you can cut it up like bars and then it becomes portable. Portable pie. Take it anywhere. No need for a fork. Just grab a slab of the slab and go wherever. I love it. It’s like the smartphone of pies.
And nothing is lovelier in pie than a sweet, fruity filling. Raspberries and rhubarb complement each other beautifully. The vanilla icing drizzled on top pulls it all together.
