A SUPER SWEET SUMMER TREAT!
I totally love this pie and I know you will too. Get it ready for your next backyard barbecue or for dessert on a hot summer night. Everyone that tastes it loves it and no one believes you when you try to explain how easy it is to make. It only takes 4 ingredients (6, if you include the optional suggestions) to make this pie. One of them is a ready-made shortbread pie crust. If you don’t have one, don’t cry. You can also use a graham cracker crust if you prefer.
Additionally, if you want to make yours lighter, you can opt for low fat cream cheese and low fat whipped topping. It’s your call. Because of the pink lemonade concentrate, you can’t taste the difference. Just sayin’. If you don’t add the red food coloring, the color will be really light pink. I like the pinkness that the coloring adds. It makes it prettier. But if you don’t have any food coloring, it will still turn out fine. It just won’t be as pretty and pink. Go for garnishing it with more whipped topping and lemon slices. Pretty presentation never hurt anyone.
