PUT THOSE MINI-CANDIES TO MORE USE THAN JUST EATING THEM!
Mini-candies always trip me up because I seem to ingest more of them than I bargained for. My brain rationalizes it away by saying, “But they’re mini! You can eat like 100 of these suckers before it equals the size of a big one.” When I’m using them in a recipe though, I can shut my brain up by reminding it that it won’t get a bite of what I bake if I don’t have enough candy to complete the recipe. Take that, Brain!
Anyway, these are so simple you’ll wonder why you never thought it up yourself. You’ll just combine the brown sugar and melted butter and use the paddle attachment on your mixer. Don’t have that? That’s ok. You can do it manually. Then you add in the egg and vanilla. Mix it up some more before you add all the dry ingredients. Mix until just combined – don’t over-work it! Then add your mini peanut butter cups and stir gently.
Bake, cool and then while it’s cooling down, you’ll make the chocolate and peanut butter glaze. It’s a straight shot in the microwave. Once it’s smooth, you’ll pour it over your cooled bars and use your spatula to smear it all around in an even layer. Patiently pop it in the fridge to set for 30 minutes before cutting it up and going to town. Heaven!
