CHOCOLATY PEANUT BUTTERY BLISS!
You’ll use a box mix as the base for this which makes it even easier on you. Prepare the cake as the instructions on the box describe for a 2-layer cake but be sure to add the instant coffee into the batter before baking. Prepare the filling while your cakes cool. Your mixer makes it easy but you could do it by hand if needed. You’ll spread it on top of each layer, just to the edges.
Next comes the ganache. If you’ve never made ganache before, I think it must mean “sounds fancier and more difficult than it is.” It’s so splendidly delicious and the first time I ever made ganache, I couldn’t believe how simple it was. To put your cake together, put one of the layers on your nicest cake plate and then pour half of the ganache on top of the peanut butter layer. Then you’ll carefully add the other layer on top of that one and pour ganache all over the top of that one. Don’t start slicing up the cake until that ganache sets or it’ll get messy.
