TOP OF THE MUFFIN TO YA!
Muffins are incredibly easy to make. Before I started baking, I’d use mixes for EVERYTHING. Especially muffins. I never imagined I could make my own way-better-tasting muffins. I always used the stuff that came in a packet and you just needed to add milk. Now I know better. You can cut out all those weird chemicals and additives and make fresh from-scratch muffins in the same amount of time. Make life easier and be sure to spray that muffin tin really well. Nothing sucks more than getting a muffin stuck and decapitating it in the pan. No one wants the ugly one.
Get two bowls. In one, stir the flour, salt, baking powder and chocolate chips together. In the other, milk, eggs, sugar, peanut butter and oil get stirred together. Then combine the contents of both bowls together until just moistened. This isn’t a cake…don’t beat it to death! Pour them into the tin and top with a few extra chocolate chips. Because extra chocolate chips make the world a better place.
