BIG ON INGREDIENTS, SMALL ON TIME!
True that the ingredient list is almost as long as my children’s Christmas wish lists, the steps to completion are a total snap and it really takes no time at all to make this fabulous cake that will have everyone raving away. You’ll need to set your egg whites out to achieve room temperature status before you begin. Also, it’s best you have an oven-proof skillet for this. If not, you can melt the butter and brown sugar in a skillet and pour into your baking pan before arranging the peaches on it.
You can sprinkle the pecans on top of the peaches next, but if you want to keep this nut free, you can leave them out. You’ll mix the batter together and pour it on top of the peaches and pecans. Once it’s done baking you’ll need to let it cool about 10 minutes before inverting the pan to reveal the beautiful bottom on top. While it will still be great cold, this cake is meant to be enjoyed while it is still warm. Offer scoops of ice cream to accompany it and it will disappear fast!
