MOVE OVER, PINEAPPLE!
I was 7 years old when my grandma made a pineapple upside-down cake for dessert one night. I was a bit dubious, despite liking pineapples. At this tender age, I thought all cakes should be made of chocolate. But Grandma was a star cook. She cooked and baked everything she ever made from scratch. The only thing she ever served us that I hated was chicken cacciatore, which she admitted later on that she’d bought from the store and didn’t make herself. To this day, I won’t eat that dish. But for everything else, even this cake I initially gave the side-eye to, she was spot-on. It set the tone for all pineapple upside-down cakes in my future.
Recently, I had the opportunity to try out someone’s clever take on pineapple upside-down cake, but instead of using pineapples and cherries, she used peaches and pralines. Be still my heart!
