GO AHEAD…SLEEP ON IT!
Sometimes, I get my best ideas at night when I’m already comfortable in bed. And it’s ALWAYS when I’m just starting to drift off too. And I tell myself I should really get up and write it down but the part of me that is drifting further into the abyss of sleep says, “Nah, man. It’s good. I’ll totally remember all this for you in the morning. Now go to sleep.” Somehow, I always listen to that voice. But in the case of these overnight chocolate chip cookies, sleeping on it IS for the best. You don’t have to remember anything, except that you should bake these cookies, and that’s easy. Because how can you forget about cookies? You can’t. They own you.
I know sometimes we want a cookie that we can whip up and shove in the oven and be done with it. And those are good too. But you should get this dough ready and stash it because it is everything you dream of in a chocolate chip cookie and so much more. By letting the dough sit, the flavor of the vanilla comes out full force and makes the cookies that much better. Don’t believe me?
TOTALLY STASHABLE!
The dough for these keeps really well. If you seal it in an airtight container in your freezer, it can last for 3 months. That’s great for when you really need a good cookie now. I don’t know about you, but I never by store-bought packaged cookies unless I’m buying Oreos to make into a crust. When you can have a cookie like this any time, why would you have anything else?
These are as simple as can be. You make the dough like you would for any other cookie, but the only difference here is that you shove it in your fridge for about 24 hours or so. Then you bake it as usual. And then after 8 to 10 minutes, you have hot, melty delicious chocolate chip cookies. I just love when they’re right out of the oven. They’re extra satisfying that way, in my opinion. Of course, let them cool just a wee bit so you don’t burn your mouth on them because that’s no fun ever.
