THESE ARE SPUD-TACULAR!
For this side dish, you’ll need to carefully slice your red potatoes. Then, you’ll take them and the other ingredients and put them in a plastic zipper bag. Shake them up really well until the potatoes are well coated. I let mine sit for about 10 minutes just to let them really soak up the flavors, but you can go right ahead and pour it into your baking dish. One thing you don’t want to miss is to cover it before baking. Let the steam trap in there to really make these sing.
The total bake time is 35 minutes, but you should stir them on occasion so they cook evenly. I stirred about halfway through. Then, you need to take the cover off and let them cook a little longer. Before serving, give them a few more shakes of parmesan for extra oomph. These go great as a side for any weeknight meal. Fried chicken, pork chops, or anything else you can think of. Yum!
