BEAUTY IS IN THE EYE OF THE BEHOLDER!
This cake will surprise you. It’s not beautiful but that’s okay. First, you need to get the oats ready by mixing them in some hot water. They need to absorb water so they’ll be ready to use in your cake. Meanwhile, you’ll get the rest of the batter together using your mixer. Nothing complicated here. By the time you’re ready to work with it, your oatmeal should be very thick. You’ll add it in stages.
First you’ll add half of it to the butter and sugar mixture. You’ll mix it up really well and then you’ll add the rest of the flour and oatmeal. Once it’s all combined, you’ll pop it in the oven to bake. And then you’ll get your frosting ready. The cake should still be hot when you spread this frosting on top. Put it back in the oven, turning on your broiler for only a couple minutes until the topping turns a light golden brown. Keep an eye on it because it can go from golden to burnt in an instant.
