I know exactly what you’re going to say. You look at this picture and you think, “My God! That is the ugliest cake I have ever seen.” Go ahead. It’s okay. I did the same thing. I thought of that one episode of Friends where Rachel gets that hairless cat and says, “Now I’m stuck with this cat that looks like a hand.” This is the hairless cat of cakes. Oh but don’t worry. I promise it only LOOKS a bit unattractive. You’re certainly not going to bust this out for a formal occasion or to be your showstopper on your dessert table, but think casual dinner or potluck and you’ve got cake gold right here.
It’s an old-fashioned style oatmeal cake and it has this coconut-pecan frosting that is quite a bit like the frosting from German chocolate cake. The original poster uses the term “broiled” to describe it and that doesn’t sound like a very appealing adjective when it comes to frosting. I think just calling it a coconut-pecan frosting is all that’s necessary. God, I’m not really selling this am I? Please believe me when I say this is a great cake. Really it is, I promise!
