DIG THAT MILE-HIGH MERINGUE!
Ok, so maybe the meringue isn’t THAT tall, but it sure sounds promising. And speaking of promises, I swear this pie tastes great. Coconut lovers, you are going to love this one! It’s easy enough too. You’ll boil milk, sugar and salt in a saucepan. While you’re doing that, you’ll mix the rest of the milk with cornstarch in another bowl. Once the stove-top mixture is boiling you will add this mixture to the hot mixture. Keep cooking this all up until it gets thick. That’s when you’ll add your coconut, butter and vanilla.
Keep cooking until this all thickens up again. Then pour it into your pie shell. Make the meringue as the directions instruct. Spoon it onto your pie and then top with coconut. Bake until the meringue turns golden brown. Do not walk away for even a second. Keep your eyes on that meringue. It can burn on you in an instant. You’ll need to let this cool for a few hours on your counter before you allow it to chill in your fridge for several hours. You could also make this the night before and let it refrigerate overnight.
