I’ve covered several different types of coconut cream pies on here. And yes, now I’m doing one more. Why? Well, it’s summer and summer time is coconut time. It’s cool and creamy and don’t we want our summery desserts to be nice and chilled? Yes, we do! I like trying new recipes for things that I have made many times before just to see if they are any better than what I’ve originally made or if combining elements of each of them make it the best item in its category. I live for the experimentation of recipes.
I also live for creamy pies. Especially coconuty ones. Yum! This particular recipe caught my eye because it involves a meringue which I have not seen on any of the other coconut cream pie recipes I’ve tried. The meringue is light and works well with the creamy homemade pie filling. It definitely tastes like the kind of thing Grandma would have made.
