LET’S NOT CALL IT HEALTH FOOD QUITE YET…BUT…
So, sure, calling these delightful Chocolate Peanut Butter Coconut No Bake Cookies a ‘health food’ might be a bit of a stretch. Okay, a huge stretch. The truth is that there is no way to make a cookie truly be a health food in the same way that a salad is. However, there is something to be said for the mental health that not restricting yourself can provide, and in that regard, these cookies are super healthy.
The other way that these cookies are healthier is that they do include some killer ingredients that are actually and honestly good for you. Oats have a lot of fiber and stick-to-your-belly goodness. Peanut butter has protein. Coconut has some of the healthiest natural oils known to man. As far as cookies go, you could do a lot worse than these semi-healthy little treasures. Mix up a batch quickly and easily, lick the pan, and let them cool. Eat a couple of them and smile. May your resolution this year be achievable and lead to your happiest year ever.
