HOW SWEET IT IS!
So, yeah, it’s a little confusing that the original poster calls this no-bake but you technically WILL need to heat up your kitchen just a bit to bake the brownie bottom for it. You can use whatever brownie recipe you like for the bottom – from scratch or use your favorite box mix. Just bake it the way you normally would except you’ll use a springform pan.
Next up, while the brownies do their thing, you’ll get the caramel sauce ready but put down that whisk once you get the sugar incorporated in there. You need to simply swirl it around by holding the handle of the saucepan. You don’t want to disturb it as it caramelizes. The rest of the caramel preparation is easy from there. While the caramel cools, you’ll get the cheesecake mixture ready. Your brownie should ideally be cool by this point too. When the cheesecake mixture is ready, add it on top of the brownie and refrigerate it.
You’ll garnish it with caramel, hot fudge and pecans. You can also leave off the pecans if you’re concerned about a nut allergy. It will still be amazing.
