NO-BAKE YOUR HEART OUT!
This recipe requires about as few ingredients as the first recipe, plus there are some differences. While you’ve still got peanut butter and rice cereal in there, there’s chocolate chips in this one as well as vanilla flavored candy coating, the kind of stuff you use to make bark.
One of the first things you’ll do is pop your chocolate chips into the freezer. They get added last and even though you’ll let the mixture cool before adding them, it will still be warm enough to cause some meltage, particularly if those chocolate chips aren’t nice and frozen first. You’ll melt the vanilla candy coating in the microwave. Oh how I love microwaves! Do this in 30-second increments though so as not to ruin it.
Next, add the peanut butter and mix well. Then pour all of that onto your rice cereal. You’ll mix this really well, then allow it to cool. Then comes the marshmallows. Once those have been incorporated, you’ll add the chocolate chips. Everything gets mixed really well, then you can drop it by the spoonful onto a parchment paper-lined sheet and let your cookies set up. Quick tip: this will happen so much faster if you pop them in the fridge. Go for it!
