NO ONE WILL EVER GUESS HOW EASY IT IS!
If you love éclairs as I do, and you hate being hot, this is the perfect cake to put together when it’s warmer outside. Plus, you can serve it to company and they will fawn all over it like it took you days to make. You only need 5 ingredients too. See? Easy! Make the pudding from the mix by adding milk and whisking until it becomes thick. Then you’ll fold in your thawed Cool Whip. Lay out a single layer of graham cracker squares in your baking pan and then spread half of the pudding mixture evenly over them. Layer again with graham crackers, and then the remainder of the pudding. One last layer of graham crackers will go on top of that.
Next comes the frosting. The original poster cautions against overheating the frosting. Use defrost to soften the frosting for no more than 30 seconds. You want it to pour easily. When it reaches that consistency, pour it over the cake and spread it around so that it gets to the edges of your pan. That’s it! Of course, you’ll need to wait about 6 to 8 hours before you serve it so that the graham crackers become soft and éclair-like. But the wait is definitely worth it. Definitely!
