CAKE AT ITS PEAK!
This delightfully zesty cake is so easy to make, too. You just need a few ingredients and it’s on. You’ll be using your bundt pan for this, or a tube pan in the absence of a bunt pan. I suppose you could use another pan if you wished but it looks so classy and more mountain-like this way.
Make the batter and pour it into your pan. Be sure to grease it really well first. You don’t want it sticking and ruining your presentation of it later. When the cake is completely cooled, you’ll make the glaze. This requires only a tablespoon of Mountain Dew (the cake itself requires a 12-ounce can) so be prepared to drink the rest of the Dew yourself. I found it fun and refreshing, like a trip back to my childhood for my taste buds. I had not drank a Mountain Dew since the age of 19 I believe, though I could be wrong. Once you get the glaze done, you’ll want to pour it on the cake. You can do this on your wire rack with wax paper underneath to catch the run-off. Or you can do it on a plate. Just be prepared for it to ooze down the sides of the cake.
So what did Laura think of this lemony cake? She was crazy about it. I sent her back to her hotel with half of it and a bunch of cans of Mountain Dew. I don’t think she’s been happier.
