With this recipe for Almost-No-Bake Mini Chocolate Peanut Butter Pies, you’ll wind up with 12 mini pies. Which you can eat all to yourself. I would. But I just don’t like to share when it comes to things like this. Okay, okay. So maybe sharing is the way to go here. These are really decadently delicious, and even for a sweet tooth like me, it’s really hard to polish off all 12 of them in one sitting.
The recipe says “almost-no-bake,” which might have you wondering what’s so “almost” about it. You’ll only have to bake the graham cracker crust. It’s easy though and takes just a few minutes. It’s worth noting that you’ll need to chill the dessert partway through the creation of it. The peanut butter filling needs to set. Just busy yourself with the chocolate ganache while you wait to maximize your down-time.
And while it does sound fancy, as I’ve mentioned before in other posts, chocolate ganache is really as easy as it gets. Once you make it one time, you’ll want to make it for everything. Even tonight’s dinner, but as lovely as ganache is, it doesn’t go so well with roast chicken and mashed potatoes, even in mini form.
