The best part of this killer recipe is that while the peanut butter cup crumbles on top were obviously what drew me to this delightful roll, it was not the best part of the dessert.
(I can’t believe I just said that.)
True, peanut butter cups might be my favorite food ever, but the sweet, smooth, spongy roll is the star of this show. The moist and fabulously springy cake is heavenly. Combined with the amazing frosting, this dessert is one for the ages. (And did I mention that you get to top it with peanut butter cup crumbles?)
A word to the wise when making this roll: Timing is everything. Creating the perfect roll comes down to timing as much as it does the ingredients. Beat the cake mixture just until it hits the “ribbon” stage. When pouring into the pan, do so slowly so you get a nice even roll base. Take care to not overbake the cake, as it will make the roll crack and be nearly impossible to roll. Timing is everything.
As a matter of fact, if you have never made a roll before, perhaps you should just consider making two on your first time out. The worst case scenario is that the first roll doesn’t come out quite as you were hoping and you can make a beautiful roll the second time.
