A DESSERT WITH A SPANISH HERITAGE!
Not long ago, when we first moved to our town, we met up with an old friend of mine and his wife and kids for dinner. We went to a Mexican restaurant and had a great time catching up over chips, salsa, guacamole and many margaritas. Although we were all pleasantly stuffed, they ordered a plate of sopaipillas for the table at the end. I’d never tried them before. I don’t know what was more astonishing…that I’d never ever had these before or that for such a seemingly simple item, they were SO beyond delicious. I mean, WOW.
Naturally, when I found this recipe, I kicked up my heels with glee. I mean I could have sopaipillas in my own home any time I want them. No longer would I have to try to save room when we go out to eat at our favorite Mexican restaurant. They’re basically heavenly little warm pastry puffs.
