Whoever said, “Go big or go home,” might just have been talking about this pie. It’s made in a deep dish pie shell that houses the layers of yumminess within.
First, you’ll bake the crust and cool it. Then you’ll get busy with that lemon filling. It’s super simple. Just heat it on the stove until it gets bubbly and thick and then take it off the heat. Butter and lemon zest get added in during that stage, as well as yellow food coloring if you wish.
The cream cheese filling happens next. And what makes this so interesting is that it is also flavored with lemon juice. So it’s a creamy lemony layer. But don’t get all swept away in the excitement. You need to save ½ a cup of this for garnish later. That way after this pie finishes refrigerating, you can put the extra cream cheese filling into a pastry bag or a plastic bag with the end cut off and pipe it on there prettily.
