CALLING ALL LEMON LOVERS!
Before the last of summer is gone, make sure you capture that sunshiny taste in these cookies. You’re going to love them! Make yourself some lemon zest by grating the lemon peel. Then take it and combine it with the sugar. It will make this lovely fragrant mixture. Get the dough ready in 2 other bowls. One bowl will hold the dry ingredients and the other will hold the wet ingredients. The wet ingredients will do battle with the mixer. Then you’ll add eggs to that wet mixture, one at a time. After the eggs, add your ricotta and lemon juice. Once those are incorporated, you can stir in the bowl of dry ingredients.
These bake for a good 13 to 15 minutes. You’ll let them cool on your baking sheet for 20 minutes. Don’t move them. Once you find that they’ve cooled, make that yummy lemon glaze. You’ll just whisk it all together and then dip the tops of your cookies into the glaze. You’ll need to let the glaze harden so either put them on a wire rack to set or just set them on wax paper. If you use a wire rack, put some wax paper under the rack to catch any excess glaze and save yourself the mess.
