SHINE ON, YOU CRAZY DIAMOND!
You’ll certainly sparkle after making this dessert. So easy, so rewarding, so lemony. To make this, you’ll need to make a lemon cake. Use a box mix. Like the original poster, I used the Duncan Hines brand. While the cake cools, follow the recipe for lemon curd just below the recipe in the link. It’s super simple and super delicious. What’s that? Don’t want to make your own lemon curd? No problem. You can usually find it in your supermarket near the jams and jellies. But I beg of you, don’t be lazy unless you must. Making it yourself is really the best way to do this. You won’t regret it.
When the cake has cooled, and your lemon curd is ready, you’ll poke holes in your cake. And then you will pour that glorious lemon curd all over it, letting it seep down into the holes. Spreading it around evenly with a spatula will help it get in every little hole. If you’d like this to be less tart and tangy, don’t use the entire batch of lemon curd, but I say if you’re going to go all lemony, go big or go home. Finish it off with the Cool Whip and white chocolate chips. You can add pecans too but I did not. I just didn’t feel the vibe. After it chills, it is good to go. Dig in!
I found this delightful recipe on the Something Swanky blog. Click the link below to see the blog and full recipe for this Lemon Poke Cake.
