A BURST OF CITRUSY BLISS!
While this is a 3-layer cake, it’s not any more difficult than a 2-layer cake. Don’t let the extra layer trip you up. You’ll do just fine. The recipe calls for shortening which I replaced with more butter. I love butter anyway and butter was falsely accused for so many years of being terrible for you. Just like they said bad things about my coffee! For shame! Anyway, I did the butter thing and it worked out perfectly. Also, you’ll be using buttermilk. Either plan to buy it when you shop for the ingredients or make it yourself with a cup of milk and either 2 tablespoons of lemon juice or vinegar.
You’ll be using both vanilla and lemon extracts in the batter which I think really helps make this so sweet and lemony. But the frosting, which is easy incidentally, has both orange juice and lemon in it, plus the zests from both fruits. It’s so tangy and sweet and unbelievably good. It is the perfect accent to the cake which has a subtle sweet lemony flavor. All of it combined makes it the ultimate in elegance.
