FORGET MUFFIN TOP…THIS HAS A MERINGUE TOP!
I’ve seen lots of muffins in my lifetime. From the ordinary offerings to the more unusual and creative. And this my dears, is definitely one of the more creative ones. How many times have you seen lemon poppy seed muffins? I know, right? Done to death! Don’t get me wrong…they are wonderful muffins. But they’re hardly original. Now these lemon meringue muffins? That’s an original idea. I love the meringue on top. It’s like someone thoughtfully bottled up this iconic pie into a muffin. And now we can technically eat pie for breakfast.
What’s that? You eat pie for breakfast anyway? Yeah, me too but no one will judge us for eating these. You can get away with much more when you call your dessert a muffin because no one will say boo to you about eating it for breakfast. These are as sweet and lemony as the pie but without the creaminess and instead has a cake-like texture but is still topped with that awesome meringue.
