WHEN LIFE GIVES YOU LEMONS, MAKE MELTAWAYS!
Get ready to knock your socks off with these! They will disappear fast so make sure you’ve tucked away a few to enjoy for yourself. One thing for these though is that you must plan ahead. This dough needs to be refrigerated for a good 2 hours. The recipe doesn’t specify about the lemon juice either. If you have the bottled stuff, that will work fine but I used fresh lemon juice. I love lemons and cannot function in my kitchen without them. I use them to drizzle extra pizzazz onto everything I cook and they’re wonderful when it comes to baking too.
When it’s time to bake them, you’ll unwrap the dough and cut it into slices. Make sure you place each slide 2 inches away from the next or your cookies will run together. Bake and allow to cool. While they cool, make your frosting. Yellow food coloring is optional here but if you want an extra pretty presentation, you should use it. These sweet tangy cookies are going to be a big hit wherever you serve them. Enjoy!
