MAKE LEMON CAKE!
This is one of the best recipes for lemon cake that I’ve ever seen and I’ll tell you why in just one word: Limoncello. You’ll be brushing it on the cake after it cools but before you frost it. And may I suggest that while you allow it to cool, you have a shot or two (or even three or four, no judgment here!) to make your adventures in baking even better.
Once you have a nice lemony buzz, just be careful not to drop your cakes. There is nothing sadder than a cake on a floor. Except the dropper of said cake eating it off the floor. But I digress. You’ll put these on plates to cool so that you can easily baste them with the Limoncello.
Then the fun part of the frosting comes in. What’s different here is that instead of the typical lemon cake being adorned with cream cheese frosting, which is delicious but ordinary, this lemon cake frosting is composed with mascarpone. After frosting, be quick to get it in the refrigerator so it sets. No one wants a runny cake. Resist the urge to dig in until it sets. You can thank me later.
