BRIGHTENS UP ANY ROOM!
You’re going to love this cake, especially if you’re just starting out with baking. You have to try it! It’s easy and utterly delicious. Everyone raves over it. Plus, it comes out looking so regal that even if this is your first cake, it’s hard to mess up. First, you’ll need to let just your egg whites sit out in a bowl on your counter so they reach room temperature. While they warm up, you’ll sift your dry ingredients not once but twice. This is to be sure that there are no lumps.
Next, you’ll whisk together the wet ingredients until they’re smooth and then add it to the dry mixture.
Now comes the fun of beating the egg whites with the cream of tartar. Use clean beaters and let the mixer do the work for you. You should have stiff peaks but it shouldn’t be dry. Fold the beaten whites into your batter in small batches at a time. Pour the batter into your greased tube pan, or bundt pan in the absence of that, and make sure to cut through the batter with a knife to take out any air pockets. Once the cake cools completely, you’ll make your frosting and then spread it onto the cake. You can garnish it with lemon zest to make it look extra pretty.
