YOU’D NEVER GUESS THEY’RE LOW FAT!
These lovely lemon blueberry drop scones are so incredible yet not high on the fat content. Which means you can go ahead and enjoy them without restriction. Make them for breakfast. Make them for brunch. Make them for a bridal or baby shower. They’re just a perfect daytime sweet. They get the “drop” in their name because they’re just blobbed onto your baking sheet instead of shaped into that notorious scone shape. But I think I like this method better and I’ll tell you why…you don’t need to make sure they all look perfect. It makes it quicker and easier.
You’ll mix the ingredients together as the recipe calls for but do beware if you are using frozen blueberries. Do not thaw them because if you do, they will change the color of the batter. While these are baking, you’ll get your glaze ready at the tail-end of the bake time. You’ll want to pour the glaze onto the scones while they’re still warm. You can enjoy them while they’re warm or once they’ve cooled completely. Or try one while warm and then one after it’s cooled for double the fun.
