MIX IT UP!
This is another one of those easy upgraded box recipes. You’ll need a box of lemon cake. Make the batter the way the box tells you to. Then you’ll add in the box of pudding mix.
You’ll fill up the lined muffin tins and bake it. After they cool, you’ll need to cut out a core from the cupcake, being careful not to go all the way through the cupcake to the bottom. You can use a small knife but if you’re going to be trying this baking thing a lot more often, you may just find that you’ll get more use out of a cupcake corer. My aunt gave me one as a gift and I was just so excited to use it.
Once you remove the cores, add the lemon pie filling. Then you’ll make your frosting. You’ll need to pipe it onto your cupcakes. You can also use a plastic bag with the end cut off. However you frost these, just remember to cover the top of the cupcake so no one can see the filling. Dust these with yellow sanding sugar for an extra bit of pretty, if you desire.
