FRESH LEMONS MAKE IT AMAZING!
What makes these pies stand out are the fresh squeezed lemons. Don’t cheat on that. Real lemon has such a fresh and bright flavor. It makes everything taste like summer.
Bake up your pie pastries and then you’ll get busy on the 3 layers. You’ll go in order of layers, heating up the ingredients for the first layer on the stove until they get all bubbly and thick. You can opt to add some yellow food coloring to it to really make it stand out from the other layers, but it’s not necessary. Refrigerate it in the pie crust for about 30 minutes. Next, while the other layer cools, you’ll get the second layer ready, beating the cream cheese and confectioners’ sugar together first, and then adding the milk and pudding mix. You’ll spread that over the first layer and refrigerate for another 30 minutes.
Finally, you’ll make the topping and once that’s done and spread across the tops of the pies, you’ll refrigerate it until it sets. If any leftovers remain, keep them stored in your fridge!
