MY KIND OF SNOWBALL FIGHT!
I might have always been a lover and not a fighter, but this is one battle that I know I would win if I were thrown into the arena. I might not have been able to throw a good snowball, but I sure can bake a great one.
These wonderful little coconut snowball cookies are simple to make with kiddos (when you can pry them away from their cellphones and their snapchats or whatever else they have these days). They are light, airy and fun to make. The addition of coconut flour to this recipe gives a subtle richness to the treat that is a delight on the tongue and extra filling for the belly.
A reminder that if you haven’t worked with coconut flour before, be prepared for a different texture and additional liquid. Coconut flour requires an increased amount of liquid as it is extremely absorbent. The recipe might not look right, but trust me on this. Do not make adjustments to the recipe if this is your first time working with coconut flour. Once you get used to the ingredients, alter as needed. But if you want to win this snowball battle, keep it consistent.
