LIME TIME!
What makes this recipe easy is the use of the key lime cake mix. You can’t possibly mess this up and what you’re left with isn’t a key lime pie, but is still an amazing key lime cake that has that beautiful citrusy sweet taste.
Bake the cake and allow it to cool down for about 5 minutes. Then, poke it. You can just use the handle of your wooden spoon. Don’t touch the bottom of the pan with the spoon handle, but be sure to go deep enough. Then mix the filling ingredients and pour the mixture over the cake. Smooth it along so that it gets into all the holes you’ve made. It’s fine if some of the filling remains on the top of the cake.
At this point, you’ll refrigerate it and make the frosting. You’re basically just doctoring up the canned stuff but it will still taste amazing. After frosting it, you can garnish it however you wish. I used fresh slices of lime peel to give it that extra zesty appeal and make it more a-peeling. Hahaha! Ok, I’ll stop with my terrible jokes. Enjoy the cake!
