Really, Iva couldn’t have made it any simpler to get delicious in your belly. Mix fresh peaches, cornstarch and sugar and then get them into a greased pan. Then, you’ll make the crust and kind of haphazardly spread it atop the peach mixture. The crust doesn’t need to be all perfect. That’s what I love about cobbler. I can breathe a sigh of relief and know it will be ok even if it looks a little uneven.
For the crust though, you’ll need to carefully separate your egg whites and yolks. The whites need to be beaten stiff before they get to be folded in. You will add them last, after combining all the other ingredients. After 45 minutes, this sweet cobbler will be ready to serve. Dig in!
