BRIGHTEN YOUR MORNING!
I love lemons. They’re just so sunny all around. The color is bright and happy. And the taste perks everything up, whether the lemon is the star of your recipe or merely a hint of flavor. I think I’ve mentioned before that I always keep cream cheese in my refrigerator because it’s good for so many things, but I’m not sure if I’ve ever told you that I always have lemons in my fridge too. I love them for cooking and baking and pretty much everything I ever do in the kitchen involves lemons. At any given moment, I have a minimum of 5 of them in my fridge.
Recently, my husband invited a friend of his from work to come over for tea. He brought his wife and kids and it was a fun way to enjoy some grown-up conversation while the children were distracted. Being a good hostess is important to me of course, so I whipped up this lemon cake made with fresh cream and lemons. It’s Italian style so it’s more like a pound cake and a little drier than the cakes we’re used to, but it wasn’t so dry as to be off-putting. The cake was a delightful treat with our tea.
